First I'd say to try resetting your notes in NoteCaddy. To do that, go to NC and click File → Reset Notes, then choose yes to let the notes process.

If that doesn't help, then please make sure your filters in NoteCaddy → File → Filters are set properly (are you unintentionally filtering out some hands)?

If the problem still is there, you can try reimporting the package that you're using, in case some definitions are missing. This one from your screenshot is NoteCaddy Edge MTT.

The stats I highlighted in the screenshot are not included in the NoteCaddy Edge MTT package. I created them myself and sent them to you to check why they are not shown in the HUD.
Everything you've suggested above doesn't help.
I ask you to see what is wrong with the definitions.

I think I found the issue. In your definitions you gave some of them the same Description and Grouping Prefix. This causes the definitions to merge, and they are not acting in the way you expect them to.

To solve it, you just need to update your Descriptions for your manually made definitions, and then reset and reprocess your notes. For example you have this: https://i.imgur.com/6zWhBpI.png. It should work if you change it to this: https://i.imgur.com/M1Z5OTI.png

I made the changes in the definitions and uploaded them here in case you want to use them rather than making the changes yourself.
