In HM2 this was done in the HUD Designer with the 'New Panels' option. In HM3 we call these 'Groups' instead of 'Panels'. Open the HM3 - HUD - 'HUD Editor' and select the profile you want to add a new group to and click the 'New Group' button in the upper left corner and add stats as needed, rename the group, etc.

If you already added stats to your main/only group and need to split them off into their own group it will take a little bit of manual work as we can't yet copy/paste stats from group to group (but that is planned for the future). Open the HUD - HUD Editor and select the 'Profile' you want to edit. In the upper left 'Group' window select the 'Default' group and click the small button right of the Delete button and 'Export Group' to your computer and then 'Import Group' that you exported.* Now you have 2 identical groups that you can edit as needed (for example remove bottom row of stats from one group and remove top row of stats from the other group). Here is a short video example showing me doing these steps.
