If you double click his HUD, it will turn red and show session only. You can do it again to go back.
You can also right-click a player's HUD to do it individually, or do this for the entire table via the 'Table HUD' menu at the top of the table.

Unfortunately HM3 does not have the option to edit that session stats color like you could in HM2.
This feature request has been documented in detail and provided to the developers for future consideration. *If you want to be notified if/when it is added please send an email via the 'Contact Support' link and include "Notify Me When HMT-5961 Is Resolved" in the subject line and body of the email.
Ok, but now I'm still using HM2. Can you let me know how can I do it?
Ooops, I apologize for that as I see now that I replied previously to this HM2 thread with some steps for HM3 which made me give a bad reply to your previous post so I will delete that incorrect post from 25Sep2020.
In HM2 it is done in the HUD Settings - General Settings - 'HUD Font' section by editing the 'Alt background' color as shown in the attached image.

Is it possible to leave the current session statistics fixed during the session? I use HM3 and it happens to me that I enter the statistics of the current session and every time someone new enters the table I have to re-enter that I only want to see the statistics of the session, is it possible to leave this fixed?
Unfortunately, that is not possible.
