On Stars the stats will pop up on maybe half of tables, but never upload a hand, or occasionally 5 or less hands. On FTP it's off and on, but never continues to upload for over ~30-50 hands.

Did you play a 10.000+ entry tournament on PokerStars recently?
Try to manually clear the auto import folders.
By moving the .txt files that are 'stuck' in there to your archive folder.
Set the PokerStars lobby language to English.
On which type of tables on Stars does the HUD NOT appear?
The only HUD issue right now affects "short HU" tables on PokerStars which will be resolved in the next update.
