Tracking hands while not sitting at the table?

Hello i was observing a table now (Pokerstars) and i noticed that only few hands are added to the database

1. can i have an explanation how does that work?

2. will it help to open tables in spectator mode during the night for example to help my database get bigger?

Stars does not allow this and we do not support this.

It will work on 3 hands played per table. (it's limited to only 3 hands, so it can't be abused to datamine)
