If you use no sorting at all it will be sorted by most recent as you are indicating. If you already set some sort, just right click on the column header and click "clear sorting"

If I want to deselect the "show in the notes popup" on a load of defs is there an easier way than going into each def individually and unchecking it ?

How to define a failed opportunity according to bet sizes instead of actions or card ranges? I need checks not to count as a failure when there's an opportunity to bet, only bet sizes.

I'd also like to know whether or not it is possible change a stat from showing as percentage to being the total sum of successful actions as a number. I'd create a new stat by dividing the total sum of successful entries with another.

That's not how missed opportunities work.

See Composite Definitions - Assaultware Wiki
You can actually accomplish your other question with composites as well. You just need to make definitions that cover all bet sizes and then one for the right bet size and then make a ratio via the composite definition

Is it possible to specify how many players are left to act after the note recipient?

I want to know how often a player reraises where they're are still 2+ players left to act after him. Is there any way for me to do this?
