Are holdem manager and pokertracker still maintained?
On iPoker 5-handed cash game tables stats are shown for four.

This issue has been documented in detail and provided to the developers to resolve.

Edit: I see a note that the HUD - 'Graphical HUD' doesn't appear to have this issue so you could try using that HUD for now until we can resolve this properly for the 'Standard HUD'.

HMT-5181: HM3 miss HUD for one player on iPoker 5-max tables

Note: There are 3 related/linked issues that also have to be addressed by our developers before these tables will be fully supported:
