3bet stats (mostly fold stats) are misleading since some people min 3bet and folding to those is more rare. How can I change the stat that it only counts folds to 3bet that are 3x-3.25x the open.

It is not possible to edit a stat in that way. You would have to use NoteCaddy Premium to try and create the stat you want.

I do own notecaddy. Is there any tutorial to do this easily?

I am not sure. You will need to ask in the NoteCaddy Forum (http://forums.holdemmanager.com/notecaddy/). Those of us on the HM2 only provide the most basic of support for NC. Anything more complex needs to be asked of the developer/support in their forum.
