I want to look at my entire database in Holdem Manager and filter the stats for how often people do things in different situations.
For example how often people cbet in 3bet-pots, how often they fold in 3bet pots etc.
I want to see the average stats for winning players.
How do I do that?

HM2 is designed to analyze the active player/hero. Some of what you want to do can be done via the Opponents tab. Beyond that:

If you want to create an alias with a lot of villains you can do it via PGAdmin or RangeMeister as explained here - Script to analyze population tendency on HEM - Heads Up SNG and Spin and Gos -- Two Plus Two Poker Forums (http://forumserver.twoplustwo.com/185/heads-up-sng/script-analyze-population-tendency-hem-1212650/) - or via the new (currently early beta) NoteCaddy Premium Aliases feature that creates an alias based on a color definition - http://forums.holdemmanager.com/notecaddy/532096-notecaddy-2-6-beta-what-he-knows-throws-blows.html - but please be aware that it can be very resource intensive to link all villains to an alias so you should have a powerful computer with lots of ram if attempting this. This technique can also cause erroneous results if some of the villain's you aliased together have played hands against each other. An alias is designed to join 2 or more hero screen names that would not have played against each other so while this is possible to do it is not something we officially support or recommend.

If you are using NC you can do the aggregate percentages much more quickly than by making an alias - NoteCaddy column chooser - Assaultware Wiki (http://wiki.assaultware.com/NoteCaddy-column-chooser.ashx)

Could you maybe elaborate on how erroneous results cold be produced if villains are aliased together that have played hands against each other? I am having trouble thinking of an example for that.

I can't recall specific examples but I know customers in the past have mentioned some of the stats not being 100% reliable in some situations when creating these aliases. HM2 was not designed to alias villains together but we also didn't prevent it from being possible so that warning is there in case you see some things when doing this that don't seem to make sense.
