I have an older computer with 512 MB of RAM. When I'm not running Holdem Manager, is it okay if I disable the PostgreSQL Server under the windows system configuration utility? Will this cause any problems when I go to enable it again for use with Holdem Manager? Are there any other services that work together with Postgre that I should disable?

There should be no other service related to postgresql. You can stop (not disable) it when you don't need it (in the windows services or in the postgresql program menu).
