I have a very large (5.21GB) file named log.txt in AppData\Roaming\HoldemManager

Is it safe to delete this file to free up space?

Yes, it is safe to delete - but after HM2 closed. More than that: this file starts from zero on every HM run.
And even more: huge log files issue is fixed in this build (http://forums.holdemmanager.com/hm2-releases/341792-internal-version-2-0-0-7437-ipoker-speed-party-poker-fastforward-support-14.html#post1538671)

Similar thing is happening to me...

I got a 7gb log.txt on same directory above (will delete) and a 50gb data folder in PostgreSQL (How to address this?).

To fix the log.txt bloating use the latest beta build from this link - http://forums.holdemmanager.com/general-support/349471-full-tilt-relaunch-information.html

For the \data folder make sure you have disabled logging and deleted the \pg_log files - http://forums.holdemmanager.com/bug-reports/350691-enormous-file-size-postgre-sql-folder.html#post1538981

Thanks. I also found 121GB of log files in the PostgreSQL folder, that was really clogging up my disk space.

Turn off the hud logging in the postgres.conf file.

Open it in notepad - or better yet, notepad++

Search for logging_collector, turn to off

I hate to reopen an issue that the solution is clear on. However, Im a bit confused on the log.txt files. In my postsql.config folder log collecting is turned off (It was already turned off I didnt have to change it), so I am good there.

I see some log.txt files in my roaming/holdemmanager folder, but multiple ones with different dates. Can those be deleted? I will post a screenshot to clarify. And by the way this is a very fresh install of EVERYTHING form postgres and HEM2, I just finished importing 3 million hands via manual import of .txt files in case thats relevant information.

HM2 creates a new log on each start up and archive them in this folder. This helps us provide better support in case you come across a re-occurring issue. You can delete these without affecting the performance of HM2.

You can also reduce how many old log files are saved in the Settings > Feature Logging > Max number of log files:
