Would you know of a way in Holdem Manager to find out in which sit 'n go's I haven't played a single hand? (vpip=0?)

There have been times I have been blinded down to 0. Sometimes the tables in Absolute Poker don't appear.

Before I didn't think it occurred on a regular basis. I'm sitting there, thinking I have like 5 tables registered. Then after a while I'm playing 4, and when I look in the lobby, I'm not registered anywhere else. Earlier I was thinking Oh, I must have opened only 4. But last week what I did was I opened Registered in Tournaments, and there it shows that I'm on the fifth table, being blinded away. But the table just never appeared. This is of course an Absolute Poker software thing, but I would really like to know how often this has happened.

How can I find that out in Holdem Manager?

You can't...

You can go over all the SNGs (or handhistories) and check the last hand to see if you were auto-allin.

If you played them on Full Tilt: you can do a text search on "sitting out" in the handhistory files.
Full Tilt actually writes that to every hand, when you're sitting out.
