Such a stat doesn't exist in HM1.
They do exist in HM2.

How often an opponent shoves: PFR category > Open Shove (these stats are unique to HM2)

The stats you actually want:
How often an opponent folds to a shove: don't really exist. The closest would be just using Fold to Steal, combined with a number of players bubble-filter: hud options--> additional HUD filters:

4:4-4 (bubble for 9max games)
5:5-6
6:5-6
7:7-10
8:7-10
9:7-10
10:7-10

HM1: hud options: additional HUD filters, you can use a number of players filter.

For example Classic STT #players filter is:
2:2-2
3:3-6
4:3-6
5:3-6
6:3-6
7:7-10
8:7-10
9:7-10
10:7-10

Where 6-handed hands will NOT be used for the stats when you play 7+ handed or heads up.

In addition you can use a number of big blinds filter: hud options--> tourney filters.
Assuming if players have a 1-7 BB stack, any 'steal' will usually already be a shove, whereas players with a 50+ BB stack a 'steal' will hardly ever be a shove.

Using a number of big blinds filter, for example:
1:1-7
2:1-7
3:1-7
(etc.)
15-20:15 to 20
(etc.)

When an opponent has 20 big blinds, none of the hands where he only had 1-7 big blinds will be used for the stats.

Yes, and there are no plans to add any new stats to HM1.
