let's say, just show the last 1 hours other player's hud,or the last 50 hands of them

Double click on the HUD---> and it will only show the session stats.
HUD options--> Additional HUD filters--> and you can set some filters (not last hour / last hands though)

HM2 does have a last hands filter.
