How do I know what abbreviations to put in the cell?

For the stat, expand the stats sections by clicking on the + sign for the area in which you want to add stats in.

You have to drag that stat to the cell. If you type text into a cell, it will only show as text.

As far as adding an abbreviation in text form as a header/title for a stat/section, make it whatever you need to know what it is. I like short as possible, but enough to make it distinct from other stats:
