Wie kann ich denn beim HM Kombi Installer einstellen das die Datenbank auf einer anderen Partition installiert wird als C ?

Don't use the combo-installer. Or only use it to install HoldemManager.

And install PostgreSQL manually with a installer from PostgreSQL: The world's most advanced open source database
During the install you'll have the option to choose a folder for you data folder (so you can install it on a different partition)
